organic compounds that are vital to life and indispensable to body functions but are needed only in minute amounts; noncaloric essential nutrients

differences between fat-soluble and water-soluble vitamins

Fat soluble: stored in the liver or in fatty tissues, can't readily move, stored
Water soluble: absorbed directly into the bloodstream and travel freely, not stored much, not as great of toxicity risks
